Components:
* Four boneless skinless rooster breasts – (about 1 half lb. / 650g)
* 1 tsp Italian seasoning
* sea salt and pepper – to style
* 2 Tbsp olive oil – divided
* 1 Tbsp ghee or clarified butter
* 1 medium onion – diced
* 2-Three cloves garlic – minced
* 1 jar (15 Oz / 450ml) tomato-basil sauce
* half cup heavy cream
* half cup inexperienced olives – pitted if desired
* 1/Four cup grated Pecorino cheese
* 1/Four cup shredded pecorino cheese
* a small handful of contemporary chopped parsley or basil – to garnish


Directions:
1. Season and rub the rooster on all sides with salt, pepper and Italian seasoning.
